This corn casserole is so delicious. It is easy to make and a great side dish that kids love and is perfect to serve if you have company for dinner.

  • 1 can of cream corn
  • 1 can of sweet whole corn, drained
  • 1 large onion, chopped fine, even grated to hide from picky kids
  • 1 red pepper, diced
  • 1 beaten egg
  • 1 cup of cracker crumbs. I used Town House Toppers Garlic & Herb-these are great!
  • 1 cup of grated Cheddar Cheese
  • 1/4 cup of butter
  • 2 Tbsp sugar
  • Salt and Pepper
Preheat oven to 350. Place the butter, onion, and red pepper in a sauce pan. Melt butter and soften the onion and pepper. In a bowl combine the corn and sugar and add the buttery mixture. stir in the cracker crumbs (reserve some for topping) and grated cheese (reserve some for topping). Add the beaten egg, stir to combine and season with salt and pepper.

Pour corn mixture into a buttered (I used butter spray) 9x9 casserole dish. Bake for 1 hour. Ten minutes before time is up sprinkle reserved cheese and top with the remaining cracker crumbs, this is optional.

After cooking let casserole set up for 5-10 minutes and serve. This serves 8. Yum!!
