This corn casserole is so delicious. It is easy to make and a great side dish that kids love and is perfect to serve if you have company for dinner.
Pour corn mixture into a buttered (I used butter spray) 9x9 casserole dish. Bake for 1 hour. Ten minutes before time is up sprinkle reserved cheese and top with the remaining cracker crumbs, this is optional.
After cooking let casserole set up for 5-10 minutes and serve. This serves 8. Yum!!
- 1 can of cream corn
- 1 can of sweet whole corn, drained
- 1 large onion, chopped fine, even grated to hide from picky kids
- 1 red pepper, diced
- 1 beaten egg
- 1 cup of cracker crumbs. I used Town House Toppers Garlic & Herb-these are great!
- 1 cup of grated Cheddar Cheese
- 1/4 cup of butter
- 2 Tbsp sugar
- Salt and Pepper
