When I read Stephanie's post on making yogurt in her crockpot I wanted to try it right away. But I was at work and my cubicle was not where I wanted to spend the 13 and a 1/2 hours needed to make this. So I put it off, talking about the idea of it repeatedly to my husband, who told me he made yogurt in a Lab at OSU. He hated it, he said it was way too sour and gross, but I was not to going to be swayed. I wanted to try it and the only thing standing in my way was procrastination.

The other weekend I finally did it. Oh man is this awesome! My batch made 12 little jars of yogurt.

I asked the kids what flavors they liked best and ended up buying frozen bags of cherries, blueberries, strawberries, raspberries, and peaches. This is what I learned:

  1. Do not buy FIVE different fruits. In fact, do not let anyone know they actually have a choice in flavors.
  2. Use jelly, preserves, or jam instead.
  3. When putting the yogurt in the fridge to cool add the flavoring then and leave overnight. Just adding the fruit to the plain and then eating does not please the picky palates in my household, mine included.
  4. Even a packet of gelatin added when I added the Greek yogurt does not make the yogurt thick. Still more of a milkshake.
  5. Do not have expectations of praise for making homemade yogurt from 10, 9, and 5 year olds.

Overall, I really liked the yogurt and the flavor is even better on the second day. I am going to try adding powdered milk next time to see if I can get it a little thicker. Plus the cost savings are huge!

Using the frozen berries was a pain. I put a portion of berries from each bag into separate containers and sprinkled sugar over them. (I never said I was making this for healthy organic reasons but more for cost and curiosity) After they had thawed, I took my stick blender and pureed each berry container, rinsing the blender between each batch. Grrrrr. Then I added about 2 tablespoons to each jar and labeled. I did make some yogurt jars with combo flavors that I thought were very good.

I will definitely try this again. I could this weekend since I will be in my kitchen making Pioneer Woman's Cinnamon Rolls, Joyful Abode's Snickerdoodles, and Cheaper Than Therapy's Chocolate Peanut Butter Balls for teacher gifts, daycare gifts, neighbor gifts, and work gifts. Maybe Tony will join me in the kitchen making his own homemade specialty, beer.

Too bad he procrastinated and we won't have his brew ready for New Years, but maybe by Martin Luther King's Birthday.

Or even Valentines. Nothing says I love you like a case of beer. Apparently that is how my husband's family shows affection because they made sure we took home a case of Old Style when we left Illinois.

We might not have spent $442,000 on a spa weekend but we did see a booth that had spas.

And some lovely couples looking at spas. That grey haired person is a man and yes, he is wear shorts over leggings!

We even saw some seals. I bet those AIG executives didn't have the nature show I did while they were having massages and facials at St. Regis Hotel in Dana Point. Nothing is more relaxing then communing with nature.

I even spotted some Okies in their native dress.

But this is how other Okies dress and for just under $100 we celebrated the Bailout in style at the Tulsa State Fair. None of us took out a sub-prime loan to buy our houses. In fact, all of budget our money and practice self control for things we can't afford. But hey, we celebrated paying more taxes for us anyway!

Mostly because instead of riding one single ride, we spent most of our evening in the Beer Garden.


During an excursion into the midway looking for a bathroom and the monkeys that take your change, we played a friendly little game of skeet ball.


Where Sonja won a Husky! Thank goodness because her husband, much like the AIG execs, recklessly spent his cash by paying off an 8 year old so that all of us could play together and so it could be one of us that would win.


But having the ability to frivolously spend $100 for a chance to win a stuffed animal, get a free t-shirt, and consume copious amounts of crap on a stick? That my friend eased the pain of being royally screwed by our government.

I did the best I could with what I had. I didn't take a sledgehammer and knock out my patio; but, as sore as my back is I might as well have. Can you see the crumbling cobblestone wall? With the lovely re-bar showing through and the metal frame taunting me with a tetanus shot? But this is as good as I can make it without being on Landscapers Challenge.

We did have a landscaping design company come out for an estimate two months ago. The first comment out of the estimator's mouth? "We will definitely use this for our before and afters". Except to get to the 'after' would cost us a mere $40,000! and that does not include a poolboy pool.

7:30 a.m. Saturday morning I was outside pulling weeds and water grass out of this flower bed.

Saturday afternoon I had transformed the shallow planting bed into something I could look at without griping about stupid it is to have a planter 12 inches deep. My husband helped me spread the mulch. The lady we bought the house from was so completely ripped off by the concrete crew that laid her patio, walls, and flower beds. It all literally crumbles and your feet hurt when you walk barefoot on it.

Sunday afternoon I tackled this lovely portion of our backyard. Such an inviting area to relax by the small pond no? See the huge hosta? I tried to replant it but my spaghetti arms would have nothing to do with a shovel so the man of the house stepped in and planted it next to our shed.

Look at that! I actually might sit and relax in my own backyard. But it is really just for show unless you are immune to mosquitoes. Still, it at least looks tranquil.

This is a view from the tranquil side of the yard looking at the "Watch Me!" area the kids play in. I even put a comfy chair facing the trampoline so I can comfortably be astounded by how high the kids can jump and push each other. Have I mentioned the crumbling patio yet and how much I hate it?

I did leave the mosquito breeding ground alone. But my husband poured bleach into the water and put one of those mosquito deterrent poison rings in the bottom clam. Hopefully, the birds won't be thirsty for a while.

But you know what I did NOT tackle? What I just cannot wrap my head around on how huge this pile has gotten but am so incredibly thankful it is not in the front yard?

THIS! I see a lattice partition in my future.

I do have a plan and that plan involves an inground pool which would involve excavation. Excavation would mean destroying the patio, walls, and planter. Have I mentioned that I despise my patio?

My high school reunion is next weekend. I didn't go to my ten year reunion because it was the same weekend I moved from Chicago to California. This time I am much closer, just an hour away so I will be going to the Friday night mixer. Finding a babysitter was not easy and I just do not feel like going through the same hassle for an additional night. Besides, can you believe what babysitters charge now days??! I was floored when I called a babysitting service and the prices were around $10-$15 an hour. Come on! There are guys on my shop floor with technical degrees running machinery that could cut their head off and they don't get paid that much when they start.

I think my husband was hoping there wouldn't be an available babysitter to be found but he got the soul crushing news that I found one yesterday. He gets to go to my reunion! He couldn't be happier.

We are going to have some of my old classmates and their families over on Sunday after the reunion wraps up. It should be fun and chaotic with kids way outnumbering the adults. But before then I have some work to do. No, not lose the ten pounds I put on since marrying the love of my life two years ago. Besides that would still make me 15 pounds heavier than what I was in high school. I was an absolute freak. 5'8" and 100 lbs with a spiral perm that was bigger than my whole body. What a nightmare, or as my best friend LouAnn will tell you, "Kim had the longest ugly stage of anyone we knew" uh-huh, thank you may I have another.

Anyway, I will not be working on starving myself instead I need to pick up and tidy the backyard. The same backyard that I would pay a gazillion dollars if someone would just come with a backhoe and tear it ALL out then haul away all the crap the previous owner installed and planted. Seriously, I HATE our backyard. I try not to think about how much I hate it and that is why I have to drink adult beverages anytime we sit out on the patio furniture. Otherwise, I just start listing off the things that have to go. This drives my husband crazy because he will take me serious and start telling me all the other projects we have going inside the house to bring our house from 1970 to 2000, not even 2008, just 2000 in fact I will settle for 1995. See, I went off on the house again.

This weekend will find me sweeping, picking up limbs from the ice and wind storms we had, last winter. Finding forgotten shoes in the underbrush beneath the trampoline. Pouring bleach into the fountain to kill the mosquito nation that made it their breeding ground. Planting the enormous hostas we were given that I jumped on but then was too exhausted and hot to plant. I just can't decide. How long would it take me, wielding a sledgehammer, to take down the patio retaining wall? Can I get it done in a day? Could I put all the debris over the fence where the house is for sale and empty? I need to shut up he is going to kill me.....

Last weekend we went to see Wall E at one of America's oldest operating Drive-In. We went with my high school friend Cheryl and her family. None of our kids had ever been to a drive-in before and I thought they would really enjoy the experience. The only other time I had been to a drive-in movie was in the early 70's to see Benji but I still remembered sitting in the back of my dad's pickup and eating snacks my mom had brought.

The movie started at 9:15 pm and the kids were excited, I think more for the popcorn, roll-ups, dipping sticks, homemade ice cream, and capri suns. At least that is what it seemed like since we went through the stash in the first 15 minutes. The boys were in one vehicle and the girls in another.

The four adults had adult beverages and just like the kids we started to partake before the sun was fully set.

As the night wore on there was bickering to break up, whining to hush, and repeated movement from car to car. We are not sure anyone, adults included, really watched more than 15 minutes uninterrupted.

But as the sun completely went down and the novelty of gorging on snacks wore off the movie began to take center stage.

Even though it was July in Oklahoma it was not too hot. And after separating the two youngest each kid created their own space and took in the experience of the Drive-In.

Everyone had a great time and I was so glad we were able to do this. Though next time it looks like the adults might need to take a nap beforehand to make it through the credits.

When we were getting ready for bed I commented to my husband that this was the first holiday where nothing was planned to the max. And I LOVED it for that reason. We started off going to a neighborhood parade where the kids decorated their bikes and rode behind a firetruck. A girlfriend from high school organizes this huge party every year. It just so happens that another high school friends lives in the same development and she invited our kids to participate in the parade. They loved it. I had no idea that a fire hose could spray water that far. There was face painting, goodie bags, and firemen how could you ask for more?

After we went swimming for a couple of hours we came home and waited out the "When are we going to light fireworks?", "Is it time yet?", "When will it be dark?", "Can I light the biggest one?" Good times.

My dad, being the pyromaniac of the family, bought the kids a huge box of fireworks. When they got tired of the sparklers and started in on all the questions I had them kill time channeled their energy by yelling at them suggesting that they should line up the fireworks in the order they wanted them to be lit. It actually worked!

The four year old has switched his loyalties. He no longer shadows his oldest sister. He prefers instead to be near, at all times, my daughter. Initially she loved it. Someone to boss around, perfect. But after moving her chair further away from his she began to realize what a heavy burden adoration can be.

"But he is sitting right next to me and I am hot." Paybacks are a bitch sweetie.

Eventually he got very tired because he kept climbing into my lap and kissing me. At one point he put his arm around my neck and started touching my ear and stroking my neck. When asked if he was tired the answer was always NO! and then he would climb down to help light the fireworks. Everyone kept looking at the two of us because it is very rare for him to be lovey dovey with me. I tend to keep my distance as well letting his dad pretty much take care of him. It is hard to hear a running commentary about what his mom said, what his mom does, and what his mom has.

Divorce/stepfamily reality: I know it is not his fault and I am fully aware of my non-forgiving attitude toward her from when she tried to have the kids taken away. It is an ugly spot in my life that I can't seem to let go. But when her son wants me to hold him and I pick him up and he is as light as a baby I wish that I didn't hate her so much.

The idea was to finish our fireworks in time to watch three different firework shows from our balcony; Jenks, The River, and Drillers Stadium. This year we could barely see the Jenks show because of all the trees. That is strange considering all the limbs and trees we lost during the ice storm. At 10pm we drove to a parking lot by Drillers Stadium and waited for the game to end to see their show. During all the complaining that they couldn't see from the balcony I had failed to whisper that bright idea to my husband, oops!

Going 370 miles for Haircut and Highlights so worth it! I really like my hair. It looks naturally highlighted, almost like I have been in the sun lounging on a beach chair having a Mai-Tai delivered to me and charged to my hotel room. The haircut is up to my shoulders and all layerery (my word) which I love. Plus I have more bangs. I will take a picture to show how worth it it was to fly somewhere for less than 24 hours to get a $45 haircut and color. (I am sure this fits into our debt reduction plan....somehow)

The hairstylist was so fast. I think she foiled me up, stuck me under the dryer, washed the color out, cut and blow dried in under TWO HOURS! Amazing. That is what I hate the most about having my color done at a salon, the time. I don't think I ever get out of a salon in less than four hours and I think that is crap. Stomp. Stomp.

It was very nice to spend time with my sister too. I think it was the first time in almost 15 years since it has been just the two of us. At first I was a little nervous about what we were going to talk about but after a bit we did just fine. It is always good if you can start the conversation out with "You will not believe what Mom said the other day."

When I flew back on Sunday I helped my weary and battle scarred husband get ready for our cookout by pouring myself a drink. :) He kept all three kids by himself and actually took them up to his office to destroy all the white boards while he worked 3 hours on Saturday. This is the first time he has had my daughter overnight without me there. It was just fine, a little crazy with all the squabbling but still good.

Our friends Donny and Cheryl came over with their two little boys. Our 4 year old was in heaven! Boys. His age. Waa-Hoo!

I noticed that Cheryl had gotten her hair cut and had a new color. When I told her how much I liked it her husband was quick to point out that SHE had HERS done in TULSA. Thanks Donny! I have your back too.

I watched the race for a little bit. The last thing I saw was that girl driver, Danica Patrick, stomping toward the other drivers pit to prove she is just a tough as a guy kick some butt. Sonja, Dave, and his daughter Emily came over and we all just hung out and enjoyed the great weather. (I am trying to convince everyone to move either across from us or next door but the freaks across the street are killing it for me. Police car in front of your house does not help me people!! Your kid's friends are the ones that keep breaking into your car, face the reality.)

So what can we take away from this post about Waco being the best place for hair and the fact that I can't rely on Cheryl's husband to back me up? CAKE.

My sister made this cake and it was AWESOME! So good. Of course I jazzed it up a bit with the chocolate chips but man this is good.

Glorified Blondie Cake
  • 1 Box Yellow Cake Mix
  • 4 eggs
  • 1 block of cream cheese, cut into chunks
  • 2 sticks of butter
  • 1 box of powdered sugar
  • Chocolate Chips (optional)

Preheat oven to 350. Grease (not lightly) a 9x13 pan.

Melt one stick of butter. In a bowl dump the cake mix, crack open 2 of the eggs and place in the mix, and pour the melted butter on top. Stir together until a thick batter. Pour into greased pan and evenly distribute.

Melt another stick of butter. In a bowl dump powdered sugar, add the cream cheese, melted butter, and two eggs. Mix together with a hand mixer (easiest) until smooth. Pour over the cake batter.

Optional: Toss chocolate chips over the top

Bake for 40-45 minutes. (If the middle is still like a jello jiggler then it is not done.)

Let rest for 10-15 minutes. Serve and enjoy the praise. SOOOOO GOOOD! Thanks Kelly!

We are finally getting around to this project on our renovation. I have put this off for a year. I think all those summers of working for my dad have made me very wary of ladders. I can't stand them! They freak me out. Almost as much as things with holes in them, like honeycombs or seed pods, just looking at those things makes my skin creepy crawly and sends cold shivers through my body. Anyway, here are some pics of my darling husband in action. My turn is next, washing all the glue off, can't wait......think I am coming down with something, cough-cough.......

We had a great time Saturday night. TD and I went to a fundraiser for Street School, a private, non-profit alternative school of choice. Their theme was The Outsiders, written by Tulsa native S.E. Hinton. They had great food from different restaurants and caterers located in the tulsa area.

You could choose to dress up or not and we decided to try and dress for the occasion. It was easy for me; white shirt, neck scarf from the '90s and rolled up jeans. TD was a greaser, so not what he would have been in high school. I don't think TD ever did anything wrong growing up much less in High School. He tells me that he got straightened out in 2nd grade by a nun that hit him so hard with a ruler he never again misbehaved. He never once spent a day inside of an In-School-Suspension room. I don't think he even skipped a class. I married a perfect one didn't I?


My friend Sonja and me? I am pretty sure we would have lived on the "right" side of the tracks with the Soc's but we would have been all about Ponyboy and his crew, there is not a doubt in my mind.

I am old and boring. I still picture myself as a 26 year old and get a little jolt when I walk past a mirror and see my mother. I am not sure when this happened to me and I want to place the blame somewhere because God knows it can’t be my fault. Not me, just because certain popular music sounds exactly like nails on a chalkboard doesn’t mean I have gotten old. How about that cute sundress at Wal-Mart? That just makes me thrifty, like shopping in a vintage store, right?

My infamous statement at eight months pregnant, “Nothing is going to change. I will still have my same life and I will eventually move back to Chicago, maybe not Lincoln Park but for sure Wrigleyville or Wicker Park.” The ladies I worked with did a good job of holding back their laughter as I waddled away.

(I try as hard as I can to remember if I ever saw a car seat on the El or someone putting one into a cab. I don’t think I ever saw one. I know I saw little kids, didn’t I? Breeders had to live amongst the hip, partying, professionals, but where? Surely there were couples with more than just a yellow lab in there possession going to brunch at Stanley’s or McGees. They don’t all move to the burbs once with child do they?)

I went out Friday night with Ezgi, the other buyer from my last job. When we made plans she asked me if I wanted to eat dinner or just get drinks after dinner. I elected for drinks after dinner, how about 7? OH MY GOSH!! When did going out later change from 10:30 p.m. to 7? Ezgi asked me if I would have to force down my dinner at 3 p.m. in order to be ready at 7. Her singledom ignorance showed. She didn’t even know it would be at 4 o’clock. Everyone knows that is when the blue plate specials are served. Geez.

Remember when you were a kid and you had the Coolest older cousin? or the neighbor kid you thought was so great?

Anna has someone. She thinks the world of this girl and considers her one of her 'bestest' friends. This champion horse rider allowed Anna to hang out with her for almost a full week last summer. Anna talks about her all the time. Jess is fourteen and her mother and I have been friends since Jr. High.

They were in town this weekend at a horse show so we stopped by to visit and let Anna get her Jess fix. One of the best weeks in Anna's life was the time she spent at my friend's home with Jess and her family. Almost a year later Anna will still mention things about that weekend. Well they did let her stay up until 5 a.m.!! It was so great to share my daughter with someone I have been friends with for over twenty years. To me it symbolized what friendship was all about and what I have always wanted, to have my kid(s) grow up with my friend's children.

But probably the coolest thing is one of their family pets.

My sister is coming up from Waco to visit. She will bring her totally adorable offspring and we are excited!

Anna does not get to watch TV Friday night, at all. (I think I probably grounded myself with that punishment) She was suppose to write her spelling words 10 times each. I compromised with her and let her write them five times while watching Disney but she had to write them another five times when she went to bed. I am putting her in bed last night and remembered the spelling words.

Me: Oh, I forgot! let me go get the spelling words from downstairs. You get into bed.
Anna: Okay, but let me get them out okay?

As I am walking down the stairs I realize that I am about to be disappointed in my daughter. I was really hoping I was going to be wrong. Uh no, sadly I was right. She wrote three of her ten spelling words a couple of times. Great! Already avoiding homework at seven. When they say the apple doesn't fall far from the tree they might mean the apple is still attached to the tree in my case since she is doing everything earlier.

I spent more time avoiding homework and making excuses and covering up then it would have taken me to actually do my homework.

We will also go see J and Mac at the horse show here in town. Anna absolutely worships J and has an 'abstract' painting to give her. I am just excited to see inside of a customized horse trailer.

And our biggest attraction for the weekend........my mom has a 'gig', or what TD and I have been calling a gig, at her church. She is in the talent show they are having on Sunday. She will be playing the oboe. She has never even touched an oboe until three weeks ago. This should be awesome!

Last Saturday each of our girls had a friend spend the night. This was the first time TD's daughter had invited any of her friends over to our house and both of our girls were excited. They all played great together! It is amazing how different girls act with each other when there is more than three. Just from past experience three is a very bad number for girls. Someone will always end up with hurt feelings. I wonder if there has been a study done on this topic, "The Devasting Dynamic of Three Little Girls"?

Two weekends ago both girls had been very successful with making their own loaves of bread. They did everything: activate the yeast, stir in the flour, knead the dough, watch the dough rise, and their favorite part-the punch down. The only help they got from me was helping them stir the flour in and transporting the loaves to the baking sheet for the final bake.

I cannot sing the praises of Suzanne McMinn and her homemade bread technique enough. I have made some form of her bread every week. So simple and I have yet to have a problem.

After their friends were invited and confirmed, I told the girls that we could make homemade pizza dough and each person could make their own pizzas. They thought it was a great idea so when their friends came over at 4:30 we got started. I used the French Bread Recipe and adjusted it per the pizza dough instructions.

The girls made three batches of pizza dough. They also helped cook the sausage and shred the mozzarella cheese. TD bought pepperoni slices and Boboli Pizza Sauce.

I made two more batches and this time I didn't let it rise for the full hour. We wanted a thinner crust and it worked perfectly. Our friends came over later and we made adult pizzas. We used fresh basil, fresh mozzarella, sauted red onion and red peppers (soooo good), roma tomatoes, sausage, and pepperoni. My pizza was so good and delicious I didn't take the time to get a picture of my masterpiece. So here is Anna and her friend chowing down.

The BEST game ever. Though I will probably no longer be getting flowers for Valentines. I have proof that working on my house has gone to my head. I ranked "window seat" in my top three right after Big Cities and High Heels. I thought "window seat" was referring to a w-i-n-d-o-w seat, the one that you build in front of a bay window. I didn't even get that it was window or aisle? and I lived in an airplane 5 months a year......

What a great night! Our friends came over and she brought the game. She and I had worked together but our husbands had just met once before. It was fun. I would highly recommend this game.
And check out my new header. I guess I really was the only one that knew it was condensation on the lid of a crock pot. Because my friend is a super talented Graphic Designer, she gave me a great idea to use a vintage crock pot. I got my old one out and took some pictures and then played in Paint Shop Pro. I was feeling all creative today. It is just before 9 and TD and I are going to bed. Kids went to bed at 7. Saturday night was too much fun for everyone.

So we took the girls bowling instead and they had so much fun.

Mercy Me was going to be at the Mabee Center which seats 11,000. The tickets were only $10 and there were 5 bands performing. Tickets went on sale at 6 p.m. and the concert started at 7. We had a babysitter for the 4 year old and it was just going to be the four of us.

When we got to the Mabee Center the parking lot was closed. TD found a way in and that is when we found out it was sold out. The girls were so disappointed, and so was I and TD was in disbelief that a Christian concert would sell out that fast.

We decided to go bowling instead. This is the first time just the four of us have done anything together and it was great! The girls really like hanging out with each other, and without having to entertain a 4 year old TD and I were able to relax and enjoy watching the girls have fun.

You can't even tell that Anna has Tylenol and Motrin coursing through her body to bring down a low grade fever can you?

There were times when Anna threw dropped the bowling ball I thought she would create a hole in the floor.

TD's daughter kept getting better each time she threw? rolled? her ball.

Anna has enough excitement for the both of them to make up for the 9 year old's quiet enthusiasm of a shot well done.

The area of my life that is the hardest for me, being a stepmom, was actually pretty great last night. I am so thankful for our family and what a great match God brought together with our girls.

I love making a roast for Sunday dinners. They remind me of home and make me feel all Hannah-Homemakerish. Sometimes it is pork loin and sometimes I choose beef, but my family likes them both. We just refer to it as "Meat" since all three kids are miniature carnivores.

My dad and his wife took us to a very nice restaraunt here in T-town, Mahogany's, for our pre-Christmas dinner. TD and I had already reviewed the menu and we knew the kids could almost eat an entire steak on their own. So when we ordered the 12oz filet for the three of them to split. My dad was not sure we had ordered correctly, "Don't you think that is too much for them?" he asked. We told him no, while thinking to ourselves they will still ask for more from the rest of us.

They did not disappoint---well unless you think we should be raising vegetarians---then yes, it would be disappointing because they ate. it. all. And just like we thought, wanted more. OH! the parmesean corn! Total hit! The kids even asked the waitress for the recipe.

Sooooo, back to the roast, it is simple, fall apart tender, and smells so good while cooking you might be prone to eating your arm-----but that is cannabalism not to be confused with carnivores.

This particular Pot Roast recipe (I have several different variations that I make up) calls for the following ingredients:
  • 3-4lbs Bottom Round Roast
  • Kosher salt and fresh cracked pepper
  • Steakhouse seasoning (I LOVE this stuff, and the garlic pepper grinder--WOW!)
  • Minced Garlic (you can mince fresh but who has time on Sunday morning?)
  • Packet of Dry Italian Seasoning mix
  • 2 tbls Seasoned Rice Vinegar
  • 1 heaping tbls of beef base (if you have a can of beef broth use it instead, I didn't)
  • one small onion cut into quarters or thick rings
  • Last but not least BACON GREASE!!!

In a bowl, that will fit your roast, mix together equal parts, enough to coat, kosher salt, cracked pepper, and the steakhouse seasoning--I bet any type of steak rub would be great too. Coat all sides, even the ends.

Since I am sure everyone feeds their family a fabulous breakfast of bacon and eggs each morning then use the bacon grease from breakfast.

Oh I am soooo kidding!! I told the 4 year old to get some peanut butter crackers out of the snack drawer when he asked for breakfst Saturday morning. But I am pathetic and wanted another cup of coffee while I watched Landscapers Challenge so I couldn't possibly make him anything.

TD had cooked an entire package of bacon for me the night before so I used the bacon grease from that. If you do not have bacon grease you can use vegetable oil. Get the oil pretty hot, I would like to say real hot but what if someone burns themselves am I liable???

With tongs carefully put the seasoned roast into the pan and sear on all sides, keep track of which is the fatty side. This normally take 2-3 minutes on each side depending how hot your oil is. When it is seared on each side, turn down the heat a bit and add the onions to sweat, about 3-5 minutes.


Take the meat and make 'X' cuts in various places on the meat. I like to add quite a bit of garlic if your family doesn't care for it then do 2 cuts on each side.


If using store bought garlic scoop about 2-3 tablespoons into a small bowl. This is to avoid contamination. Using your finger and a spoon stuff the minced garlic into the 'X' cuts. Push the garlic down into the meat as far as you can.

In the Crock Pot pour in 1 1/2 cups of water (or can of beef broth) add the beef base and stir, this will break apart more as it cooks. Add the rice vinegar and stir.

Place the seared roast, fat side up, into your Crock Pot. Pour a packet of Dry Italian Seasoning mix over all and in the water/broth. This will make the gravy even more delicious. Place the onions on top of the roast. If some slide off no bigee, still wonderful in the gravy.

Turn your Crock Pot to Low for 8-10 hours. This can be made to be ready for after church. Change the setting to High for 4-6 hours.

Remove and slice. Pour some of the au jus on top and take some out to use for gravy. Thick brown gravy can be made from the au jus, but who has the time???
